Welcome to the weekend, my friends! We’ve had such a fun week both in the snow and cozy indoors. It’s about to get very chilly here for the next few days, and I’m ready for it with some warm, hearty meals.

ON OUR MENU THIS WEEK: Chicken and Bacon Fried Rice. There aren’t many meals that top the convenience of combining leftover rice with a bit of bacon and some leftover chicken in a way that delivers so much deliciousness.

Loaded with flavor and just a hint of heat, these Italian stuffed bell peppers are filled with ground beef and rice, seasoned with plenty of Italian spices, and topped with cheese.

Fresh mushrooms, bell peppers, and sweet onions are sprinkled throughout this buttery, garlicky, rice side dish.

Flaky pie crust filled with fluffy, creamy eggs, spicy green chile, and cheese adds up to a delicious breakfast any day of the week. Eggs and green chile are two of my family’s favorite breakfast ingredients, so it could come as no surprise that my entire crew loved this Green Chile Quiche.

Meanwhile, I’m also trying to plan my breakfasts in advance, in order to get a bit more protein in my days. So there is a batch of beautifully jammy eggs waiting in the fridge, along with plenty of cottage cheese and fruit for some tasty breakfasts.

Smashed Brussels Sprouts with balsamic glaze are the candy of my vegetable-loving world. I simply can not eat just one. Truth told, I don’t think anyone I’ve ever served them to has been able to resist eating many more than one.

What I’m CRAVING: These Big Mac Sliders caught my eye yesterday and they look really great. I already know that my boys are going to love them.

My FAVORITE THING this week is my water bottle. I don’t know exactly what it is about this very basic 20 ounce water bottle, but I drink more water now than I ever have. I think it’s partly due to the fact it is a great size to carry with me through the day and also because it’s surprisingly easy to drink all the water and then refill it.

What I’m LISTENING to: Bass & Mandolin by Chris Thile & Edgar Meyer. I’ve enjoyed Chris Thile on the mandolin ever since I first heard Nickel Creek 20+ years ago and this is a whole new level of music. This collaboration and this entire album is truly fantastic acoustic music.
