❤️WHY WE LOVE THIS RECIPE
This cake is really fluffy and has a wonderful flavor and then you add the butterscotch frosting and it takes the whole dessert to a new level. It’s pretty easy to make too and will be a hit at any family gathering. It’s also a pretty cake, which is always a plus!
🍴KEY INGREDIENTS
This recipe is made from scratch but you do use butterscotch instant pudding and butterscotch chips. We see a lot of these cakes with a cake mix but this is one is made a little differently. It results in a really delicious cake and the butterscotch pudding is a great addition!
SWAPS
We use buttermilk in this recipe and everytime someone will ask if they can use milk. I am sure you probably can and you can also make a buttermilk substitute, however, please know that by doing either of those you are removing fat from the recipe. Buttermilk is much higher in fat and that will change the recipe and it may not be as moist.
⭐TIP
If you find that the frosting is too thick, add more milk until it is the consistency you need it to be so you can easily spread it. The frosting will harden some once on the cake, but will still be delicious.

Butterscotch Cake with Butterscotch Frosting
If you love butterscotch this cake is for you! Easy to make and wonderful to take to any gathering. Always a hit!
- 1 cup brown sugar
- 1 stick butter or 8 tablespoons or 1/2 cup softened
- 3 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 3.4 ounce box butterscotch instant pudding
- 1 1/2 cups buttermilk
- 1 cup butterscotch chips
- 1 cup nut pieces pecans or walnuts
Butterscotch Frosting Ingredients:
- 1 cup butterscotch chips
- 2 tablespoons butter
- 3 cups powdered sugar
- About 5 tablespoons milk

Cream together sugar, butter and eggs with mixer. Add vanilla extract. Whisk together in another bowl the flour, baking powder, salt and butterscotch pudding mix. Add flour mixture along with buttermilk to creamed mixture and mix

Fold in butterscotch chips and nuts with spoon. Spray a 9 x 13 cake pan with cooking spray. Spread cake batter in pan. Bake in preheated 350 degree oven 30 to 35 minutes until center tests done. Add frosting
Frosting Instructions

Melt chips and butter together in microwave or on top of stove. It takes about 1 minute 25 seconds in my microwave

Add powdered sugar and a little milk while mixing with mixer. Continue mixing and adding milk until the get the frosting consistency you want. Spread over cooled cake.
